The harvesting, canning, packaging and quality assurance processes employed relate very closely to those of canning pilchards. Canned Sardines and Pilchards are produced in the same HACCP production facility.
Fish are caught by means of purse-seine technology
- Transported in cold water, refrigerated or on ice to the cannery
- Fish are automatically cleaned, headed and gutted
- Fish are packed into 120 g 'flat' aluminum cans by hand
- Brine solution is added to cans prior to exhausting (cooking)
- The cans are exhausted to soften the bones and reduce the moisture trapped in fish
- The free moisture and brine are drained from cans
- Oil is added to cans
- The cans are seamed
- The cans are retorted (pressure cooker) to complete the cooking process and to ensure sterility
- The cans are bright stacked prior to labelling
- A sample of cans out of each production run is inspected by an inhouse SABS representative and then sent to the SABS head office in Pretoria for final inspection to ensure microbiological and incubation and food safety standards are met.
- The cans are hand-packed into branded cartonettes and are marketed to customers by a well placed and efficient sales and distribution infrastructure (Southern Africa and Internationally).
