Origin: Chile and Peru

Mackerel is a common name applied to a number of different species of fish, including, but not exclusively, Scomber japonicus and Trachurus picturatus murphyi. They occur in all tropical and temperate seas. Common features of mackerels are a slim, cylindrical shape (as opposed to the tunas which are deeper bodied) and numerous finlets on the dorsal and ventral sides behind the dorsal and anal fins. Mackerel is an oily fish (therefore an excellent source of Omega-3 fatty acids) and are an important recreational and commercial fishery.

The harvesting, canning, packaging and quality assurance processes employed relate very closely to those of canning pilchards and sardines.

•  Fish are caught by means of purse-seine technology
•  Transported in cold water, refrigerated or on ice to the cannery
•  Fish are automatically cleaned, headed and gutted
•  Fish are automatically packed in 425g steel cans
•  The cans are exhausted (pre-cooked) in the can to soften the bones and reduce the moisture trapped in fish
•  The cans are drained, a brine solution (Pacific and Jack Middlecut) or sauces (Tomato and Chilli) added, and the cans then seamed
•  The cans are retorted (final cooking process) to complete cooking and to ensure sterility
•  A sample of cans out of each production run is inspected at the cannery.
•  The cans are then branded with the Lucky Star label and readied for distribution and sale in customer-friendly packing outers.
•  Each batch is then passed by the South African Bureau of Standards prior to going on sale to consumers.
